This beautiful cobalt blue drink has a citrusy and slightly sweet taste of lemongrass, which harmonises perfectly with the mild floral taste of the butterfly pea flowers. Adding a drop of lemon juice changes the colour of the tea from blue to purple. Delicious and visually appealing, it has immune-boosting properties and is enjoyed both hot and cold.

Steep for 2 minutes (2 infusions)
