Our genmaicha is a delicious tea celebrated for its comforting balance of fresh and toasty flavours. It is made by blending Japanese green tea leaves with roasted brown rice, which gives the tea its signature warm, nutty aroma and smooth, mellow taste. Our genmaicha is distinguished by its high-grade sencha base, which adds a bright, refined vegetal, umami character and exceptional clarity to the cup. The blend is further elevated by the use of high-quality Japanese rice, carefully selected and expertly roasted to bring out a naturally sweet, fragrant, and slightly caramelized note. Together, these premium ingredients create a harmonious tea with a beautiful lime color, gentle sweetness, roasted notes and a soothing, well-balanced finish.

Kōridashi, also known as ice brewing, is a unique and elegant way of preparing tea in which the leaves infuse as ice cubes slowly melt. The tea is placed in a cup or teapot either under or on top of the ice cubes. This method allows the tea to release its flavors gradually, resulting in a sweeter and smoother infusion compared to hot-water brewing. The slow melting process reduces the extraction of bitter compounds, giving the drink an exceptionally soft, refreshing, and delicate flavor profile.

It is made by blending green tea leaves, most often bancha or sencha, with roasted brown rice, creating a unique balance of fresh, grassy notes and toasty, nutty flavours. The tea has a long history in Japan, where roasted rice was originally added to make tea more accessible and filling. Over time, genmaicha became cherished not just for practicality, but for its soothing taste and everyday comfort.

    Genmaicha is often affectionately called “popcorn tea.” This nickname comes from the roasting process, during which a few rice grains naturally pop and resemble small pieces of popcorn. There is no popcorn in the tea, but these popped grains contribute to its cozy look and warm, inviting aroma.

    The rice used in genmaicha plays a crucial role in the final flavor. Only specially selected short grain Japanese rice is used, chosen for its aroma, texture and ability to roast evenly. The way the rice is roasted has a major influence on the tea’s character: lighter roasting brings gentle sweetness, while deeper roasting adds richer, nutty and slightly caramelized notes.
