A high-grade sencha, with stems, gently roasted to create a beautifully rich and complex tea. Remarkably sweet and smooth, it brings together mellow umami and warm notes of roasted nuts. The gentle roasting reduces its caffeine content, resulting in a rounded, comforting cup with a delicate sweetness that lingers long after each sip.  The roasting process is exceptionally demanding and takes place in carefully controlled stages. As the tea contains tender buds, mature leaves and stems, each element responds differently to heat and requires its own roasting temperature and timing. Achieving the perfect balance calls for great precision and experience and the skilled roaster has hisown closely guarded method for mastering this intricate process.

How to make a perfect cup of tea:
3 g (1 tsp)
250 ml water
80°C
Steep for 2 - 2.5 minutes (2 infusions)
