Kōridashi, also known as ice brewing, is a unique and elegant method of preparing tea in which the leaves infuse slowly as ice cubes melt. The tea leaves and ice cubes are placed together in a cup or teapot. As the ice gradually melts, the leaves release their flavours slowly, creating a sweeter and smoother infusion than conventional hot-water brewing.
The slow melting process reduces the extraction of bitter and astringent compounds, resulting in an exceptionally soft, refreshing and delicate flavour profile.
